Beggar's Chicken

I prepared this chicken with roast carrots and steamed rice, and it was universally lauded as being the Best Meal Ever by the other diners (my children).
  • One frying chicken, (4 pounds or so) cut into pieces
  • flour
  • Marinade:
  • 1 tsp sesame oil
  • 1 Tb dry white wine
  • ¼ tsp ground star anise (or more!)
  • ¼ tsp freshly-ground pepper
  • 1 clove pressed garlic
  • ¼ soy sauce
  • 1 tsp grated fresh ginger root
  1. Mix marinade ingredients in a zippered bag and marinate the chicken pieces in the bag for half a day at least, refrigerating and turning occasionally.
  2. Presoak pot for 15 minutes in warm water.
  3. Add chicken and marinade to the pot.
  4. Place covered pot in a cold oven and set temperature to 450 degrees.
  5. Cook 45 minutes.
  6. Ten minutes before end of cooking time, remove the pot and pour off the liquid into a saucepan.
  7. Return the pot to the oven, uncovered, for 10 more minutes or until chicken is no longer pink in the center.
  8. Bring the liquid to a simmer and add a Tb. or so of flour, to thicken.
  9. Serve with rice, liberally drenched with the sauce!
