Bilbo's Seed Cakes: a new recipe!

This cake is not too sweet, and is delightfully crunchy with seeds. Every Hobbit ought to have a few in the pantry (or the freezer) in case of uninvited company.
  • 2 sticks butter, softened
  • 1 cup sugar
  • 3 eggs
  • 2 cups unbleached flour
  • 2 cups white whole wheat flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 3 Tb caraway seeds
  • 3 Tb poppy seeds
  • ¼ cup chopped almonds
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • ¼ cup brandy, or apple juice
  • Seed topping: Mix together ½ cup sugar, 2 tsp poppy seeds, 2 tsp caraway seeds.
  1. Preheat oven to 300.
  2. Grease large cookie sheet.
  3. In large mixing bowl, cream together the butter and sugar until fluffy.
  4. Add vanilla and then add eggs, one at a time, scraping bowl between additions.
  5. Whisk together flours, baking powder and soda, seeds, and spices.
  6. Add half the flour mixture to the butter mixture, stirring well.
  7. Add brandy/apple juice and combine.
  8. Add remaining flour mixture, but don't overmix!
  9. Make dough into patties, about 4" across and 1" thick and put on cookie sheet. Sprinkle seed and sugar mixture over the top.
  10. Bake for approximately 30 minutes until cakes are golden and firm. Cool on wire racks.
