Massaged Kale Salad with Pomegranate

Massaging kale makes it chewy and sweet and tender. I can eat a whole bowlful of this yummy salad in one sitting. And absolutely with no guilt!
  • 1 large bunch of curly kale, preferably green
  • ½ lemon
  • sea salt to taste (preferably Himalayan pink)
  • ¼ cup coconut milk (in the can…I use regular, not lite)
  • ¼ cup Virgin Coconut Oil*
  • 1 small clove of garlic, minced
  • fresh ginger, grated, to taste
  • a scant ⅛ tsp curry
  • a scant ⅛ tsp cumin
  • pomegranate, peeled and broken into seeds
  • Parmesan cheese, for sprinkling on top
  1. First, make the dressing: mix the oil, coconut cream, garlic, and spices into a small bowl.
  2. Clean, de-stem, and tear a bunch of kale into bite-sized pieces.
  3. Squeeze ½ lemon or lime over the kale and sprinkle with sea salt.
  4. Now for the fun part: with both hands, massage the lemon juice and salt into the kale leaves for about 2 minutes.
  5. Pour the dressing over the kale and keep massaging until it’s the way you like it.
  6. The leaves get soft and sweeter, as you massage them.
  7. Toss with pomegranate seeds, and sprinkle freshly-ground Parmesan cheese on top.
  8. Chill for a few hours or eat immediately.
  9. Other good additions: sliced strawberries, toasted nuts, craisins, raisins, pine nuts.
  10. Then the only thing left is to eat it!
  11. Use your imagination and add to it anything you like (post-massage!) Sliced strawberries, craisins, pine-nuts, walnuts, sunflower seeds . . .
