These pancakes are delicious for breakfast, of course, but also are superb for a lunch or even dinner, with the topping of Greek yogurt and pecans adding plenty of protein.
Ingredients
2 cups whole wheat flour (I use white whole-wheat)
1 cup quick oats
½ tsp salt
4 tsps baking powder
2 tsps ground cinnamon
2 large eggs
2½ cups milk
2 tsp vanilla
homemade maple syrup (optional) or honey or jam
Greek yogurt (also optional, but very nice)
toasted pecans (ditto)
Instructions
Mix together the dry ingredients: the flour, oats, salt, baking powder and cinnamon, in a large bowl.
Mix together the wet ingredients: the eggs, milk, and vanilla.
Make a well in the dry ingredients and pour the wet ingredients into the well, and stir until mixed. A few lumps is okay: don't overmix!
Fry in hot skillet, with melted butter or coconut oil.
Serve with butter, maple syrup, Greek yogurt, and toasted pecans tossed with ruthless abandon atop. YUM.
