Better-than-Village-Inn's Pecan Pancakes

These pancakes are delicious for breakfast, of course, but also are superb for a lunch or even dinner, with the topping of Greek yogurt and pecans adding plenty of protein.
  • 2 cups whole wheat flour (I use white whole-wheat)
  • 1 cup quick oats
  • ½ tsp salt
  • 4 tsps baking powder
  • 2 tsps ground cinnamon
  • 2 large eggs
  • 2½ cups milk
  • 2 tsp vanilla
  • homemade maple syrup (optional) or honey or jam
  • Greek yogurt (also optional, but very nice)
  • toasted pecans (ditto)
  1. Mix together the dry ingredients: the flour, oats, salt, baking powder and cinnamon, in a large bowl.
  2. Mix together the wet ingredients: the eggs, milk, and vanilla.
  3. Make a well in the dry ingredients and pour the wet ingredients into the well, and stir until mixed. A few lumps is okay: don't overmix!
  4. Fry in hot skillet, with melted butter or coconut oil.
  5. Serve with butter, maple syrup, Greek yogurt, and toasted pecans tossed with ruthless abandon atop. YUM.
