Coconut Collard "A Big Mess of Greens"

If you've been thinking that you need to get more greens into your diet, here's a yummy recipe that'll help you do just that! This recipe makes enough for you to share, although you may not want to. :)
Ingredients
  • 3 tsp coconut oil
  • ½ medium onion, diced
  • 1 bunch collard greens, stems removed, cut into ribbons
  • ½ cup coconut milk
  • ½ tsp freshly ground salt
  • fresh grated coconut (optional)
Instructions
  1. Heat coconut oil in large cast iron skillet over medium-high heat.
  2. Reduce heat and add onion and cook, stirring frequently, for 10 to 15 minutes, or until golden brown and very soft.
  3. Add greens and coconut milk; cook, stirring frequently, for 10 minutes, or until greens are very tender.
  4. Add salt to taste.
  5. Sprinkle with optional coconut, if desired.
  6. Eat while hot!
