Best Hens of 2021!

A Question for You

Am I the only one, at every year’s end, who feels the need to gather up all the good memories, the lessons learned, the challenges faced, the high points and low points, and to document them in some way? When this process is finished, I can look forward to the next year with a clean heart, a blank planner and a sharp pencil, and get to work on the next year. I especially like to record the best-ofs: the best new recipes, snacks, books, tech, products, and more from the year.

Does anybody else does this?

Maybe some of you might say . . . YES. You’re the only one, Amy. And others of you might admit to doing this, too. There is some satisfaction, some closure in tying up the memories and experiences from one year before facing the next. At least that is my experience on the matter.

And with that, I’ll tease you a little to listen to the Sweet as Love Podcast this week. Bethie and I chatted about our 2021’s “Best-ofs” in this new episode.

1. Best new recipes

Egg coffee recipe

Golden Latte recipe

Bethie’s “Naan” recipe

Amy’s Burrito Beef recipe:

Ingredients:

  • 1 Beef Roast
  • Olive oil, 1 Tb
  • 2-3 canned Chipotle peppers, chopped
  • 1 chopped onion
  • 3-4 cloves of garlic, diced
  • 1 small jar of your favorite salsa
  • salt and pepper, to taste

Directions:

  • Sear the beef roast in olive oil until nicely browned
  • place in crock-pot with 1/2 cup water, peppers, onions, garlic, and salsa. Season with salt and pepper.
  • Cook on High for 4-6 hours.
  • Shred when tender.
  • Serve on tortillas, with any of the following: sliced onions, greens, sour cream, shredded cheese, additional salsa, slivered cucumber, etc.

2. Best buys from 2021

From Amy: My Eufy Robo vacuum! His name is Little Brother; he is my new favorite thing! Everybody who has a floor and dust should have one! (YES it even takes care of the dog hair!)

As a matter of fact, the reasonably priced model that we bought nearly 6 months ago is on sale right now on Amazon, at about a 30% price drop! (GET. ONE. NOW.)

Bethany shared how her life improved dramatically this summer when she purchased a trampoline with a safety net similar to this one:

Bethie bought a used one in great shape, and it has been a hit with the littles, who bounce on it every day–sometimes several sessions every day! They love it–they are having fun and getting exercise and fresh air, and Bethie loves the contented play time they enjoy in a safe, enclosed space. Out in the sun, even on a cold day, it’s a wonderful place to play! (Wishing I would have had one when I had a houseful of littles!)

3. New tech that we’re using this year

Bethie: Trello is an excellent online organizational tool that we’re keeping all our goals, businesses, and projects organized on. (note from Amy: I use it, too!)

Amy: My favorite new writing app is Scrivener, an easy-to-use app with more writing bells and whistles than I can even use! I’m writing my book on it right now, and I love using it.

4. Favorite snackage

Bethie: keeping fresh veggies cut up in her new segmented veggie tray, similar to this one, served with hummus and fresh dip:

Amy: Same!! Fresh veggies with this dip: It’s yummy and so quick and easy to make!

5. Kids-related fun & Stuff

Bethie: discovered that her little boy loves to work in workbooks. (This is BIG for a homeschool mum.) This is the one she talks about on the podcast:

And these are the Magnatiles that Bethie talked about. Her family loves them, and we have a set too, and everybody who comes to our place seems to play with them at some point!

Amy: Mack and Bryan and I spent many happy hours on the Disc golf course, in the bowling alley (on truly hot or windy days) and in my folks’ basement playing pool.

Tune into the podcast and hear even more best-ofs from 2021. It was a buggar of a year, but there was still plenty of goodness to be mined from it.
